The first two years of this immersive course consisted of training in bar and restaurant supervision. I undertook modules such as Communications, Bar Operations, Food and Beverage Management and  Advanced Beverage Studies. These modules expanded my knowledge of preparation and service of alcoholic and non-alcoholic beverages.

As part of this course, I had the opportunity to work in a student-led cafe and restaurant and work in placement/shadowing positions in Lough Erne Resort and Harvey's Point. This gave me a greater understanding of working in a customer-orientated environment, how to work under pressure and be part of a team.
