Job Responsibilities Included: Brand Management:• Taking care of Fine Dining and Brands such as: Café Ritazza, Expresso and Fine Dining Restaurant ( 77 East – Indian Concept ).• Closely working with India’s well-known Food Critique, ‘Karen Anand’, for menu planning, menu designing and restaurant designing. Operational Responsibilities:• Standardization of SOP.• Implementing reporting procedures and formats for the Outlet for Stores.• Monthly P & L and Projection of Sales & Budget for complete geographical region.• Menu Engineering, Menu Designing, Food Costing and Projected P & L for Bangalore.• Site Selection, Equipment Ordering, i.e. Complete Project Execution. Business Development / Regional Development• Identification of new areas for expansion and potential of the same.• Liaising with architects, designers and contractors for project execution with timeline.• Supporting launches for New Stores Human Resource Management• Employee Requisition to the Management for the Karnataka Region• Process initiating through job web-sites, referencing & advertisements.• Screening of suitable resumes & conducting technical tests / interview.• Selection for crew members, senior crew members, assistant store managers, store managers, hostess, head captains, captains, stewards, restaurant managers being taken care for.• Finalizing of process by offering Offer Letters.• Conducting performance appraisals after 6 months as per company policy. PA based solely on performance subject to successfully achieving KPI’s / KRA’s of the organization.• Audits done on employees and outlets managed keeping strict vigil key financial indicators in Profit & Loss account statement.• KRA’s / KPI’s observed: Net Sales, Food Cost, Labor Cost, Wastage / Dump Cost, Accounting Procedures, Unannounced Brand Audits etc.• Rewards & Recognition Program observed consistently for development of employees through motivation (competency mapping).
Handled Entire Operations of Central & Eastern Kingdom of Saudi Arabia.- Job responsibilities included same profile as previous job with Costa Coffee in the UK, however, has higher magnitude, i.e. handling 4 sites operationally, focusing on Regional development, Feasibility studies, Financial Management etc.- One of the key elements is to negotiate with suppliers for major products, promotional activities, improvising on brand awareness, developing brand identity, maximizing shareholder’s wealth.- Job duties also included, overlooking operations of another Area named as Al Khobar which is 450 kms from Riyadh, all in all, taking care of two regions in Saudi Arabia. Total outlets taken care of till date: 6.- To support marketing activities, in KSA, many newspapers are approached, such as, SHMS (Youth Magazine), Arab News, Saudi Arabian Airlines to promote Costa Coffee. New product development, i.e. introduction of new sandwiches, cakes, pastries range is also more focused. - Menu Engineering, Menu Designing, Food Costing and Projected P & L.- Being a Franchised Operation of Costa Coffee in the UK, Complete project execution like: Site Selection, Franchisee Agreement, Equipment Ordering, was taken care of.- Handled 120 Employees along with recruitment at various levels, i.e., crew members, senior crew members, Assistant Managers, Store Managers & Assistant Area Managers.Completed Operational Training in Kingdom of Bahrain by Handling more than 25 Outlets & 180 Employees- Job responsibilities includes same profile as previous job with Costa Coffee in the UK, however, has higher magnitude, i.e. handled 8 sites to operationally, focusing on Regional development, Feasibility studies, Financial Management etc.
Handled Costa Coffee Outlets in Guildford, Cobham, Waterstones Leeds, High Street Outlets, Scunthorpe etc..- Managing Profit and Loss Account for the store, Recruitment & Training and Performance Appraisals.- Coffee Expert (TRAINER) with Silver Coffee Excellence from London Roastery, UK.- Sales Target, Labour Target, Marketing and Promotion (Liaise with BBC for marketing strategies). Youth Café introduction at Costa Coffee, Cobham, Surrey, UK.- Helping the Franchisees to open and set-up Costa near Leeds. - Completed Employee Relations Workshop, Basic Food and Hygiene Workshop and Health & Safety Workshop, UK.- Total Net Sales Turnover for all outlets managed was approximately £ 1 million pounds (GBP).- Salary as Store Manager: GBP 16,000/- (Sixteen Thousand Great Britain Pounds) per Annum
During my undergraduate program in India, I had a great desire to pursue a Masters programme in hotel management. I decided that the University of Surrey was the place to go. One of the most important reasons was the highly experienced Professors and Lecturers. In addition, Surrey was ranked very highly amongst Universities in UK. Surrey provided streamlined courses designed to create an unbelievable interest in students, such as Hotel Property Management, Operations Management, Financial Management, Marketing Management etc..The Surrey campus is beautiful and the School of Management has a state of the art building. The lake on campus was just perfect for studying during Spring. All an all, UniS is one of the best universities to study.Currently, working as a General Manager for a Resort near Mumbai, my Masters programme is helping me a lot to apply the strategies required to develop business in my area. I am really thankful and grateful to all my professors and lecturers.
