  • Assist in the supervision of the school food service operation, which feeds over 3,000 students in 3 elementary schools, 2 intermediate schools, 1 middle school and 1 high school.

  • Created monthly menus for elementary and secondary schools usingUnited States Department of Agriculture (USDA) enhanced food-based menu guidelines
  • Developed nutrition education materials,taught nutrition classes and represented the department at wellness events
  • Worked with students with special dietary needs, such as diabetes, celiac disease and phenylketonuria (PKU)
  • Hired new staff
  • Maintained the departmental website to include school menus, free and reduced meal application information, and upcoming events

  • Received a $20,000 federal grant and established the United States Department of Agriculture (USDA) Fresh Fruit and Vegetable Program at Hurt Park Elementary School
  • Created a 6-week cycle menu that complied with all United States Department of Agriculture (USDA) guidelines.
  • Implemented a new food safety system including updated Standard Operating Procedures and formal training in the form of ServSafe classes
  • Developed new recipes to be used in batch cooking that met all United States Department of Agriculture (USDA) standards

Samara Collins is the Child Nutrition Supervisor for Mooresville Graded School District in Mooresville, NC. She is a certified trainer for the National School Nutrition Association and a certified ServSafe instructor and exam proctor for the National Restaurant Association. She earned her bachelor's degree in Human Nutrition, Foods and Exercise and her master's degree in Health Education from Virginia Tech.

Samara's short-term goal is to earn her RD so that she can more effectively educate students in the area of nutrition. Her long-term goal is to find creative and innovative ways to run a school nutrition department that is profitable, meets all federal guidelines and regulations, utilizes government commodities, and provides students with healthy, well-balanced meals.
