Developed Marketing and Merchandising pieces for several vendor’s and exclusive brands of products in the Center of the Plate Arena.

Selected Contributions:

  • Responsible for the direction and operation of the portion control red meat operation in the Tallahassee, Florida Division. Responsible for the P&L, Staffing, Quality Control and overall sales performance. I reduce costs and brought the operation back to profitability in 9 months time.
  • Designed and developed copy, arranged photo shoot and edited a 12 page promotional brochure for portion control steak operation as part of the effort to improve profitability of Tallahassee portion Steak operation. Initial sales exceeded targeted roll out sales by 4.9%.
  • Direct purchasing strategies of four commodity protein buyers. Take advantage of market situations to improve raw costs of product purchased for resale.

·Increased bottom line savings on purchases of over $110 Million in three distribution facilities by 4.5%.

·Served on Purchasing Council of 6 independent Foodservice Distribution Companies. This group advised the procurement departments of said companies’ directions on procurement policies and products.

·Trained managers to set up other purchasing departments.

  • Increased year over year sales by 12.3% in cases and 18.2% in dollars the targeted category.
  • Performed GAP analysis on 4 categories. Eliminated non-performing items and added new items to broadened product offering. Improved sales in all 4 categories on average of 14.2% on a targeted growth of 5%.
  • Exceeded business goal in generation of extraneous income by over $265,000 in a targeted category.

Selected Contributions:

  • Negotiated and outsourced portion control red meat program. Developed specifications, set margins and developed division marketing tools to drive sales.

·Utilized purchasing strategies to improve performance of an under performing group of 4 buyers.

  • Enhance negotiation skills of all 4 buyers through mentoring and guidance.
  • Trained buyers on several product replenishment programs. Perishable products category where just in time inventory sourcing was a must.
  • Negotiated Regional short-term and long-term contracts. Improved overall cost savings by 3.75%.
  • Planned and led execution of service level improvements.
  • Increased profitability on the entire protein complex by nearly 4.4% while increasing sales by over 10.1%
  • Increase funding of internal marketing program from external sources by over $625,000.

Corporate Category Manager, Center of the Plate

EMCO Foodservice Systems, INC.

Design and implement a centralized purchasing method for a commodity protein category utilizing the volume commitments of independent foodservice operators. This was a “Stand-Alone” Program where I was charged to develop, forecast and maintain my own P&L. Development of marketing and merchandising promotions for the several nationally branded vendors to incent customers to purchase products from those partnered vendors in the Center of the Plate Category. Provided leadership and training for personnel on a staff of which I was charged to build.

Selected Contribution:

  • Successfully launched centralized purchasing program to where it was profitable after 13 weeks. Built program to the point of participation level of 86 distributors well in excess of 1.2 million pounds per week.
  • Lead the charge and developed a Sales Training Program for participating distributor companies.
  • Developed a go to market strategy that benefitted participating members who utilized the program to grow their business in the category on average 12.3% annualized.
