  • Managed Catering and Retail to defence with full profit and loss accountability for 7 outlets employing 85 people delivering 5 star quality for VVIPs and Royals, In-flight Catering and managing full Spar brand and processes. 
  • Managed all the stakeholders and evolved client engagement which had been almost non-existent, relationships had to be mended, nurtured and maintained; which was achieved very successfully leading to a true partnering environment.  
  • Drove sales and found profit gaps while motivating and developing the team; as an inclusive approach strengthened the teams desire to achieve. Worked with the Royal British Legion to provide catering for Poppy Appeal Concert 2013.

  • Designed training course involving outsourcing of logistics, catering and soft service functions. Piloted this course, which is now up and running to 30 MOD personnel every 6 months.

  • Implemented new Catering Retail and Leisure system across the base in-line with strategic operational plan.  Managed associated change programme including due diligence and asset audit and Risk Register.  Reported programme risks.
  • Represented 120 staff under TUPE to new outsourced contract management organisation.  Provided management support in hostile and emotional environment.

  • Responsible for in-flight catering services for 35 global RAF contracts and annual budget of £3m.  Managed contract management teams including Emirates, Gate Gourmet, LSG Sky Chefs and Headland Food. Built strong global relationships, which secured high levels of services for all RAF personnel.
  • Conducted review and analysis of services, authored business case and secured additional budget to deliver services in line with industry standards.
  • Introduced new contracted out meal system to deliver in-flight service.  Managed tender, selection and implementation processes.
  • Completed technical evaluations on all contracts, re-tendering when appropriate. 
  • Re-wrote in-flight catering policy documents to bring up to industry standard, rolled out across all in-flight catering contracts.

  • Selected for this position to ensure seamless day to day management of soft contract services including water, waste, sewage, cleaning, laundry, deliveries, servicing and catering to support requirements of 9000 personnel operating from main base and 15 outline bases.
  • Reviewed and agreed invoices, conducted monthly audits on food, waste etc. to ensure delivery of services in line with SLAs and KPIs. Maintained excellent relationships with multiple contract suppliers in a hostile and diverse environment.
  • Transferred all soft Services to counterparts in US Army on 01 Apr 09 when UK left Basra.  This required close liaison with other forces with different political direction and mandates creating an unbalanced environment that needed managing judiciously.

  • Monitored two contracts with annual value of £5m, worked in partnership with service providers.  Delivering 1200 meals a day and all soft facilities. Strict KPI’s for service delivery, customer satisfaction for Servicemen and gain share.
  • Implemented first pilot of the 'Pay as You Dine System', managed communication programme across the site to sceptical customer base.  Delivered project within timelines.

  • Managed 120 personnel providing catering and hotel services to support requirements of  2000 personnel (four meals per day) in the Falkland Islands.  Planned supply route (8500 mile logistics chain, air and sea) and negotiated local contracts when supply route failed.
  • Introduced new contract for fresh salad and vegetables with local farmer, which had not been previously attempted on the Islands. Ensured Health and Safety regulations and UK Food Law observed. 
  • Managed in-fight catering kitchens and output.
