I gained as much experience as possible in a controlled environment in a small town and are now looking at broadening my horizons. Share Holder and Full Restaurant Operator with the following responsibilities:

  • Day to day running of the restaurant including the following duties:
  • Stock Ordering
  • Stock Control
  • Event Co-ordination
  • Tour operator Liason
  • Human Resources Management and all staff rosters
  • Restaurants books to trial balance including foodcost
  • Promotions and special events
  • Menu updates and designs
  • Kitchen Co-ordination

Included in these duties were all day to day issues arising and associated with ownership of a restaurant.

2003 - 2008

Manager

Kingfisher Restaurant

I started at Kingfisher in 2003 as a junior manager. Kingfisher used to be a franchised restaurant and I did training with the then Operator Riaan Jordaan through the Oudtshoorn branch where I received the full training of Operator in a smaller restaurant. I was then allocated Kingfisher Mossel Bay on a trial basis to manage and operate under active operators. Kingfisher Mossel Bay is a high volume high turnover venue. I successfully completed my training in 2007 and was transfered to Cafe Havana as a part shareholder/operator.

After I left school I started off my career in the restaurant trade in Pavillion Restaurant in Mossel Bay as a waiter. Decided to move to Kingfisher since I was offered a managers position.
