Summary

My name is Erica, and I am a recent graduate from a combined Master's program at Benedictine University located in the suburbs of Chicago. This program allowed me to obtain my Master's in Nutrition and Wellness while also completing the appropriate supervised practice work for my dietetic internship. 

Throughout my internship, I have gained tremendous experience in many areas such as clinical, long term care, food service management, retail foodservice, WIC, school nutrition, assistant living programs, and even managing a nutrition counseling service at Benedictine University. In addition, I have experience in developing curriculum, modifying recipes and menus, giving nutrition related presentations, creating educational modules, preparing in-services, and writing newsletters. 

Furthermore, I am a certified personal trainer and have my Serv Safe certificate for food safety and sanitation.

ST. ANTHONY HOSPITAL (12 Weeks)

Chicago, Illinois       

  • Assisted personnel with the full range of relevant patient care. Assessed and evaluated patient nutritional needs, clinical data, nutritional history and current patterns; assisted in planning and implementing therapeutic dietary programs for diverse patients with a wide range of needs.
  • Created patient education materials including food selection and nutritional requirement direction. Monitor residents for hydration levels, food and drug interactions, and caloric intake.
  • Performed general health care duties in absence of personnel; assisted staff in completing patient carerounds.
  • Planned, researched, and composed in-service training for dietetic employees; instructed employees regarding patient education protocol and relevant documentation processes.        

WEST CHICAGO SCHOOL DISTRICT #33 (12 Weeks)

DUPAGE CONVALESCENT CENTER (5 Weeks)

Wheaton, Illinois

  • Charged with purchasing, ordering, producing, and maintaining food inventory levels.
  • Trained and scheduled 15 to 20 employees; developed strategic staff training sessions. Inspected kitchen for food preparation, storage and handling; ensuring compliance with Department of Health and State of Illinois regulations.
  • Completed temperature logs, meal rounds, test trays, plate waste studies, and safety and sanitation audits. Drafted and administered patient satisfaction survey.
  • Conducted daily meal rounds to ensure that:  appropriate calories and fluids were consumed, correct food textures and temperatures were maintained, presentations are appealing, and set-ups are correct. 

MANORCARE -LONG TERM CARE (5 Weeks)

Westmont, Illinois

  • Assisted in completing patient care rounds; instructed patients on food selection and nutritional requirements. 
  • Conducted daily meal rounds to ensure that:  appropriate calories and fluids are consumed.
  • Identified problems and intervened, make changes in care plans, follow through with orders sent to nursing staff. Monitored residents’ hydration levels, food and drug interactions and caloric intake by conducting chart audits. 
  • Completed chart notes/audits, as well as MDS and RAP documentation. 
  • Utilized expertise to develop effective diet, exercise, and lifestyle program with an emphasis on optimizing health and quality of life.
