  • My family (Dad) owns the restaurant, Cosmo's Italian Kitchen. There are 2 locations in Aliso Viejo and Las Flores. 
  • I have worked and helped manage in every aspect of the restaurant since its opening almost 20 years ago. My 'formal' positions at the restaurant include Manager, Server, Bar-tender and Host. 
  • Duties include everything from inputting orders, handling cash,  delivering food and beverages promptly, as well as, demonstrating a comprehensive knowledge of all menu items and beverage mixing and serving.
  • I have earned a reputation for putting guests at ease, handling large crowds, and maintaining composure during stressful situations.
  • Recognized as "Lead Manager" which includes mentoring and training new servers, as well as, accounting for all waitstaff sales and receipts nightly/weekly.

• Directed and oversaw the football department including in-house programs and remote football camps.  I worked side-by-side with Jordan Palmer training some of the top Quarterbacks in High School, College and the NFL including guys like Sam Darnold, Deshaun Watson, Josh Allen, and many other recognizable names. 

• I Taught, analyzed, demonstrated and explained the fundamental skills of football, as well as, helped mentor and develop young men into responsible, and wise adults no matter what path they chose.

• Tutoring, Nutrition, and Cardiovascular activities also are a large part of my football program.

• I especially enjoy watching the individuals grow into a strong, tight-knit team who are all working together to achieve one goal.

Achievements

  • Completed a full, 26.2 mile marathon, with no training. Bad Idea, but I did it!  (San Diego Rock-N-Roll Marathon)
  • Climbed the highest mountain in the Continental U.S... in one day! (Mt. Whitney)
  • After graduating from UCLA, I back-packed South East Asia for three months (Thailand, Vietnam, Cambodia) and toured all over Europe (8 Countries) with my younger sister.  
  • My Father, Bob Quinn, own's Cosmo's Italian Kitchen for almost 20years and my My Mother, Cindy Quinn, is a PE teacher at Newhart Middle School and has been teaching for 25 years.
