Great Southern Cafe
As a hostess for The Great Southern Cafe, I greeted guests, escorted them to their table, and presented them with menus. The most important duties as a hostess are checking with the kitchen to see where they stand (if they are getting behind), keeping the counts for individual servers so tips come out fair at the end of the night, checking with phone reservationists or answering machine messages to assure you have all reservations, making sure entry doors are free and inviting, and making sure all menus and glass windows are kept clean. The hostess sets the pace for the number of people eating at the restaurant. She must communicate with waiters/waitresses and the kitchen at all times to orchestrate a steady flow of people in and out of the restaurant.
