  • Currently overseeing the drafting of a Cheese Export Guidelines dossier.
  • Coordinated and implemented an executive outreach agenda to the SAGARPA (Agriculture Ministry), Secretaria de Salud, and state agricultural agencies.
  • Negotiated the inclusion of artisanal cheesemakers in the producers’ area of the MESAMERICA forum.
  • Drafted position papers supporting artisan cheesemaker techniques including use of wood boards.
  • Advised the governments of Chiapas and Tabasco in the process to gain a Collective Trademark for cheeses in the path to obtain a Denomination of Origin.

  • Currently in charge of special projects as a Technical Consultant on cheesemongering and public relations.
  • Developed and co-coordinated the logistics of the first premium artisanal Mexican cheese distribution company in Mexico, with sales of over one ton annually to the food and hospitality industry.
  • Opened a full service cheese counter in 2014 and designed training manual to run this retail space.
  • Conducted trainings, tastings, and seminars for chefs, service staff, and cheesemakers.

  • Coordinated the Secretariat of the GMG Working Group on Mainstreaming Migration into Development Planning in New York City and Geneva.
