Candice graduated from Rush University in June 2015 with a Master of Science in Clinical Nutrition. Candice completed her dietetic internship at RUMC, passed her Registered Dietitian Examination, and licensed in the state of Illinois. Her interest in clinical nutrition includes nutrition support, pediatrics and neonatal, as well as, outpatient counseling.

Dietetic Intern

  • Clinical Experience
    • 600+ hours patient care experience using the nutrition care process with diabetic, cardiovascular, gastrointestinal, renal, pediatric, general medicine, oncology, and critical care patients.
    • Provided medical nutrition therapy to 15 to 25 adults in surgical intensive care unit and general medicine patients while supervising a diet technician during a 4-week staff relief rotation.
    • Collaborated with multidisciplinary team during daily rounds to provide individualized patient care using nutrition care process; documentation with electronic medical records during specialty care rotations.
    • Managed daily enteral and parenteral nutrition orders under the supervision of CNSC credentialed Registered Dietitians.
  • Management and Research Experience
    • Supervised a 100-hour management project for National Nutrition Month from September 2014 to June 2015.
    • Executed four monthly nutrition and cultural events for over 100 Rush employees, students and visitors through collaboration with the cafeteria and first-year dietetic interns.
    • Presented a poster on “What is the association between the type of milk consumed and weight status in 2- to 11- year-old children in NHANES 2009-2010?” to the Department of Clinical Nutrition faculty and students.
    • Presented research seminar on “Epidemiology and Nutrition Trends in China” using scientific and evidence-based research to the Department of Clinical Nutrition faculty and students.
  • Community Experience
    • Utilized motivational interviewing skills to counsel diverse population including bariatric, pediatric and neonatal clinics during outpatient experience.
    • Counseled and educated diverse patient populations in the Chicago-land area in senior centers, health fairs, Facing Forward and Head Start.
    • Created and presented “Introduction to Dietary Approaches to Stop Hypertension” along with cooking demonstration of low-salt entrees for over twenty participants.
    • Assisted dietitian at day camp for diabetic children sponsored by the American Diabetes Association.
  • Foodservice Experience
    • 200 hours of food service management in retail services and patient meal services with the focus of hospitality, patient meal and production.
    • Supervised 10-15 employees on the tray line, kitchen, and dishwashing unit to ensure proper quality control and sanitation processes.
